Seared tuna with aubergine and herb yoghurt

Seared tuna with griddled aubergine, a tomato and balsamic onion salad and a dressing of greek yoghurt, lemon juice, crushed garlic, chopped coriander and basil.

Just brush the aubergine in olive oil and put it on a red hot griddle, keep the brush and olive oil handy in case is starts to dry out.

Throw the seasoned tuna steaks on the griddle for a couple of mins, depending on how you like it cooked.

I soaked the onions in balsamic for 10 minutes. It really brings out the flavour.
