Last night’s dinner: Homemade turkey mince burgers, with sweet potato chips, asparagus and a homemade tomato, yoghurt and basil dip. Tell me again you’d rather have a microwave low fat ready meal!
How to do it
Make the burgers to your taste. For these I added a teaspoon of cumin and coriander powder, fresh ginger, crushed fresh garlic and chilli flakes and shaped them into burgers, brushed with olive oil and cooked them on a very hot griddle.
The relish was made with live greek yoghurt, chopped fresh tomatoes and chopped fresh basil. That’s it.
The asparagus was also pan-fried but you could steam it.
I sliced the sweet potatoes nice and chunky, brushed them with oil, seasoned them and roasted them for about 20 minutes.
