Chicken with red pepper and garlic quinoa

Free range chicken breast roasted with a little coconut oil, roasted red peppers, plum tomatoes, courgettes, shallots and whole unpeeled garlic gloves, drizzled with a little olive oil. It's all served on a bed of quinoa which I flavour by mashing the roasted garlic cloves in with it. Sooo good, clean and very filling.
